(Farm wives used to prepare cookies like this with lard.)

2 c. packed brown sugar
1 c. shortening
1/2 c. buttermilk
1 tsp. vanilla
4 c. quick-cooking oats
1 3/4 c. all-purpose flour
1 tsp. baking soda
3/4 tsp. salt

Heat oven to 375 degrees. Mix brown sugar, shortening, buttermilk, and vanilla in large bowl. Stir in remaining ingredients.

Shape dough into 1 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten with bottom of glass dipped in water. Bake 8-10 minutes. Immediately remove from pan. 7 dozen cookies.
