STUFFED MUSHROOMS | |
1 pkg. stuffing mushrooms 1 med. onion, chopped 1/4 c. green pepper (optional) 1 clove garlic, minced Butter 1/2-3/4 c. Ritz crackers, crushed 3-4 tbsp. Parmesan cheese 1/2 tsp. seasoned salt 1/3-1/2 c. chicken broth Pepper to taste Remove stems from mushrooms, finely chop. Melt butter in saucepan. Add chopped onion, minced garlic and chopped mushroom stems. Saute over medium heat until onions turn brown. Add crushed Ritz crackers, cheese, salt and pepper; mix well. Stir in broth. Remove pan from heat and spoon stuffing mixture into mushroom cups. Place in shallow pan with 1/4 water in bottom to add moisture and to prevent burning. Bake uncovered at 325 degrees for 25 minutes. Serve warm. |
