STUFFED MUSHROOMS | |
This is nothing with a processor, with a hand grinder it's a little harder. 2 lbs. lg. whole mushrooms 1 box stuffing mix 4 eggs 8 oz. Cheddar cheese 2 stalks celery 8 oz. ham, cooked 1 onion 1 stick butter, divided 1 green pepper 1 c. wine & 1 bouillon cube Whirl stuffing cubes and seasoning mix in processor into crumbs; put in large bowl. Wash mushrooms; remove stems. With steak knife, chop stems of mushrooms, ham, onion, pepper, celery. Add cheese which you have shredded. Bind with eggs and 1/2 stick melted butter. Stir in crumbs. Stuff mushroom caps. Place in baking pan. Mix wine, remaining butter, 1 cup water and bouillon cube. Pour around caps. Cover with foil. Bake 1/2 hour at 350 degrees. If you have stuffing over, bake in custard cups. Serve instead of potatoes at a meal. |
