“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Fabulous recipe. I used 1/4 cup of oat flour and 3/4 cup whole wheat flour (both from Bob's red mill). I added some salt and used cake spice from Penzeys instead of the Cinnamon (1/8 tsp only). I also used 1/2 cup low fat milk and 1/2 cup whole milk. Super delicious pancakes. Served them with home made blue berry sauce. Thank you!

These were fantastic! Forgot to pick up eggs at the store yesterday and this recipe was perfect! We eat pretty healthy and love the protein we get from the eggs. So instead of the sugar, cinnamon and vanilla I substituted one large scoop of vanilla protein powder. Used with the whole wheat flour, these pancakes were amazing!!

Was craving pancakes and realized.no eggs!! Googled pancakes no eggs and this wonderful recipe popped up! I added a little more flour and baking powder (batter was a lil runny) and they were absolutely wondeful. I love cinn in my pancakes so def a crowd pleaser! Thnx for the recipe :)

I think these are just ok. If you have no eggs or an egg allergy they may be the best of the eggless recipes (never tried eggless before so not qualified to comment). I did make two changes to the recipe. I omitted the cinnamon because I wanted to compare it to my usual recipe which does not have it. I also noticed the recipe has no salt so added 1/4 teaspoon. They texture and fluffiness were pretty good. However, I feel the flavor is lacking. These may be he blandest pancakes I have ever tasted. I may experiment with changing the amount of butter or extract in them to see if I like them better.

The first time I made, VERY BLAND, but I gave em another shot, and I doubled the vanilla, tripled the sugar, and added I tablespoon maple syrup to batter. Much better, yum!

I made it with a combination of whole grain flours, yogurt with almond milk in place of the milk, and omitted the sugar and it worked great. So glad I can make pancakes without eggs!

I am a major pancake fan, and much to my dismay I was out of eggs tonight so I tried this recipe... it was wonderful! I made them with whole wheat flour and they were light and fluffy and I could hardly tell there were no eggs in them. Great recipe!

Great!! I loved these pancakes. Made,them for my husband and he said they were amazing.. I added extra vanilla and less cinnamon. Worked great. Also tried them with chocolate chips and were even better. A must try!

Slightly modified this recipe to include more sugar and semi skimmed milk ... But it worked a treat ... Actually better than the with eggs variety ... Light and quick to make ... 10 on 10 !!!
