“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Tried these on a whim. Fantastic. Delicious, fluffy, and other than having a lot of ingredients to assemble they're quick and easy to make. I melted the butter in the microwave instead of on the griddle. With no eggs on hand, these will be my go-to pancakes.

I have 3 boys 6 4 1 its hard to get all three to like the same meal after dad made this eggless pancake mix all three sat quietly and asked for seconds w others bands w egg they will eat 2 at most this recipe they ate 4 they were so happy my morning as been calm and quiet when the filled belly's :)

I didn't unthaw anything for dinner and found myself hungry. Bacon and pancakes was all I could think to have since it was nine at nite. Look in fridge and no eggs. Remembered there was an eggless pancake recipe on this site. I had all of the ingredients except vanilla. So while I'm whipping up this recipe, I prayed that it came out decent.

Well, I added 2 extra tsps. sugar, used margarine instead of butter, 1/8 tsp. cinnamon, and forgot to add the water. Let me just say that these pancakes still turned out AWESOME!! I used a homemade syrup I got from this site. I THANK YOU, DAWN for putting an end to my empty and growling stomach. I've never heard of a homemade pancake recipe without eggs, let alone made one. This recipe deserves 100 stars. And thanks to you too cooks.com

This was exactly what I was looking for,; a basic and tasty egg less pancake recipe. I have made these pancakes several times and each time I tweak it a bit. I found that they tasted a bit bland the first time I made them, so for the second batch I added 1/3 teaspoon of salt and they were FANTASTIC. The other changes were just personal/family preferences. I LOVE these pancakes. Thanks for sharing !

I forgot to add that I also used Almond milk and when I went to make a second batter and didn't have enough of that, I threw in a little more water and baby formula! It was amazing!

My son's friend slept over and I found out he had an egg allergy. Wasn't sure what to make for breakfast. Saw this recipe online and made eggless pancakes. He said they were great and I thought so too! May add a little more sugar next time, but cinnamon gives these a great flavor.
