FRESH APPLE CAKE 
2 whole eggs
2 c. sugar
1 1/2 c. oil
2 3/4 c. flour, plain
1 tsp. baking soda
3 c. peeled & diced apples (about 4 apples)
1 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla extract

Mix sugar and oil. Add eggs and vanilla. Mix flour, cinnamon, soda and salt. Combine the 2 mixes, adding into the mix the diced apples. Grease Bundt pan, then sprinkle lightly with flour and sprinkle in pecan meal.

Pour in Bundt pan and bake in 350 degree oven for 1 hour. Test for doneness at end of 1 hour, as ovens vary in cooking time and additional time may be required to obtain golden brown texture.
