“EASY BREAKFAST CASSEROLE” IS IN:
NEXT RECIPE:  EGG NOG FRENCH TOAST

EASY BREAKFAST CASSEROLE 
1 lb. sausage, bacon or ham
3/4 cup sharp cheddar cheese
1/2 cup mushrooms & pieces
5 eggs
1 3/4 cups milk
6 to 8 slices of bread (cubed)

Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.

Beat eggs, milk, salt and pepper, pour over top.

Let stand 5 minutes then bake at 350°F until brown (35 minutes).

This is soooo good!! I make this at night and put it in the fridge covered...I use cubed ham and instead of the mushrooms I do sauteed onion and green pepper...its like a western omlette but WAY better!!

Great recipe! I tried it your way and it was great, then I tweaked it a little the second onions sauteed in with the sausage instead of mushrooms and added a little mozzarella, garlic salt and pepper, cayenne pepper, and crushed red pepper before adding the egg mix. Also I used egg beaters instead of eggs and it turned out pretty good if you like a little heat! Thank you so much for your recipe!!

I make this every Christmas morning and precook the bacon, sausage, mushrooms&onion. I use a 1-inch deep cookie sheet and place crustless bread slices on the bottom pile on the cooked bacon, sausage, mushrooms & onion mixture, shredded cheddar cheese on top and pour the mixed eggs on top (with salt pepper and dry mustard). I let it rest overnight wrapped in the fridge. when I start coffee on Christmas morning I put it in the oven at 350°F for 35 minutes. My daughters will not allow any other breakfast on Christmas morning. This will fill a family of 6 easily with a couple of leftover slices.

Excellent recipe, I used 6 eggs instead of 5. I used a 9x13 glass pan - it was done in 35 minutes.

This was excellent, however, I did tweak it a bit like some of the others have mentioned. I used about 4 pieces of bread cubed and then half a box of the cranberry stuffing mix (dried). I also sprinkled a little dried onion flakes on top of the mushrooms. This was delicious. I froze individual portion sizes and when I brought it to work with me to reheat in the microwave, it still tasted wonderful. Thanks for sharing!

I popped the heat up to 375°F so it cooked well for 35 min. Didn't have any bread in the house so I used some potato and onion. I also threw in some chicken sausage stuffed with mango and jalapenos. Wow!!

I added a pkg of McCormick's Spinach Dip seasoning to the egg/milk mixture to make a florentine version. Also put some mustard and red pepper flakes for additional taste. Very good!

Ok so I just prepared this and it is in the oven. I substituted smoked sausage, sauteed that with onions and Italian seasoning blend. Used stuffing bread crumbs I had on hand instead of fresh bread. Only cheese we had in the house was American. I used 8 eggs with a cup and a half of milk, salt and pepper. So fingers crossed. I'm hoping after reading everyone elses substitutions that this will turn out good. My mom always makes a form of this on Christmas morning so I'm guessing the true judge will be my daughter telling me how it compares to nanas. She always uses sausage and adds Worcestershire sauce to her recipe but sauteed kielbasa is always a side dish Christmas morning so I figured it would work. We shall see!

I changed this recipe up a bit by adding a dozen eggs, 2 cups of 2% milk and bacon, sausage, broccoli, onions, zucchini as well as Italian herbs, garlic powder salt and a dash of cayenne pepper. it needed approximately an hour and a quarter, but turned out quite good. I used a 9x13 baking dish.

I use hash browns instead of bread 2 cups mild cheddar 2 cups Swiss 2 cups pepper jack 13x9 pan top with sour cream and salsa when plating

Has anyone ever tried using corned beef hash as the base layer? I made it using the hash, then tomato sauce and sliced mushrooms. I cooked the sauce down until thick, then added layer of colby-jack cheese, then add 9 beaten eggs seasoned with black pepper and Lawry's with 1/2 cup of milk, cook for 30-35 mins. Hash needs something with it to help it bind, maybe cracker crumbs?
