LEFTOVER ROAST BEEF CASSEROLE 
1 1/2 c. cut up beef
1/2 c. onion, sliced thin (saute)
1 c. celery soup or mushroom soup
1/3 c. milk
3 c. potatoes, sliced
3/4 c. shredded cheddar cheese

Arrange in casserole dish, 3 cups potatoes mixed with the other ingredients. Sprinkle cheese over the top. Bake uncovered at 350 degrees for 1 1/2 to 2 hours.

I pre-cooked the potatoes for 5 min in the microwave in order to shorten the cooking time. Also added some julienned cabbage.

Tried this over the weekend with leftover pot roast. It was a big hit! I used the mushroom soup and added mushrooms. You could use bread crumbs with butter instead of cheese on top. I also precooked the potatoes in the microwave for 5 minutes so the casserole took about an hour in the oven. It was great reheated too. This one is a keeper!

I've made this casserole numerous times and it's always well received. It is also very forgiving in that I can add extra beef if I have it, leftover roast gravy, other veggies, etc. But the basic is hearty and delicious just as written. I love Cooks.com for the down-to-earth recipes I find here.
