Leftover Roast Beef Casserole

I found that this recipe was lacking flavor and cook time was highly under estimated. Potatoes needed lots more water to cook through, so I added about a cup of water as well as TWO small cans of tomato sauce. I bumped the heat to about 450°F and cook time about an hour, maybe more. I also added more salt and garlic powder and that made it taste richer.

How do I dry the beef to turn it into "chipped" beef?
