SAUSAGE BROWN RICE FETA
CASSEROLE
 
1 can mushrooms, small can
1 onion, chopped
1/2 c. green pepper, chopped
1 1/2 c. canned tomatoes
1 clove garlic, minced
Salt and pepper
2 c. cooked brown rice
1 lb. sausage
3 oz. feta cheese
6 black olives sliced
2 tbsp. grated Parmesan cheese

Cook sausage, set aside, cook (fry) onions, garlic, green pepper in oil 5 minutes. Add tomatoes, cook 10 minutes uncovered, add mushrooms cook 5 minutes. Pour half of rice in casserole (1 1/2 quart). Add sausage, add feta cheese. Add rest of rice, then rest of sauce. Sprinkle 2 tbsp. Parmesan cheese on top. Can be made ahead of time. Bake at 350 degrees for 45 minutes.
