SAUSAGE CASSEROLE 
1 lb. bulk sausage
1/2 c. onion, chopped
1/4 c. pimento, chopped
1 1/4 c. milk
1/2 tsp. poultry seasoning
1 sm. can mushrooms; optional
1 c. soft bread crumbs or cracker crumbs
2 tbsp. butter, melted
1 c. celery, chopped
1/2 c. green pepper, chopped
1 can mushroom soup
1/2 c. rice, uncooked
1/4 tsp. salt

Brown sausage; drain. Then add celery, onion, and green pepper. Cook until vegetables are tender on low heat; do not brown. Stir in rest of ingredients EXCEPT crumbs and butter. Pour into ungreased casserole dish (1 1/2 quart). Bake covered at 350 degrees for 50 minutes. Stir occasionally. Mix crumbs and butter then sprinkle over top. Bake another 20 minutes uncovered.
