SHRIMP SCAMPI IN GARLIC BUTTER
WITH RICE
 
1 stick butter
2 lbs. shelled and deveined jumbo shrimp
2 lb. sweet Vidalia onions (about 2 large)
6 cloves garlic
1/4 cup vegetable or olive oil
1 tbsp. salt, pepper, to taste
2 tbsp. fresh lemon juice
1/4 cup chopped fresh parsley
1 cup rice, uncooked

Boil 1 cup of rice, set aside.

In a food processor or blender, puree onion, garlic and oil. Melt butter in a large skillet.

Transfer mixture from blender to skillet with melted butter. Sauté until onions are transparent.

Add salt (optional) and shrimp. Lightly sauté for 5 to 8 minutes. Add lemon juice, pepper to taste and sprinkle with parsley.

Serve over cooked rice.

Serves 4.

Was good but the recipe says 2 lbs onion... I used 2 medium onions not even near 2 lbs and that was over kill big time. Were gonna be breathing onion for a week.

This recipe is very similar to the one I make, but I don't use the blender at all. I buy the minced garlic in the jar in the produce department at the store & instead of using regular oil I use garlic oil. If I put onions in it which I usually don't, I use a small one & chop it in small pieces or if I'm in a hurry I use the seasoning minced onion & sprinkle a little bit of it on. I'm all for doing it the simple way. However, very good recipe!!
