SHRIMP SCAMPI IN GARLIC BUTTER WITH RICE | |
1 stick butter 2 lbs. shelled and deveined jumbo shrimp 2 lb. sweet Vidalia onions (about 2 large) 6 cloves garlic 1/4 cup vegetable or olive oil 1 tbsp. salt, pepper, to taste 2 tbsp. fresh lemon juice 1/4 cup chopped fresh parsley 1 cup rice, uncooked Boil 1 cup of rice, set aside. In a food processor or blender, puree onion, garlic and oil. Melt butter in a large skillet. Transfer mixture from blender to skillet with melted butter. Sauté until onions are transparent. Add salt (optional) and shrimp. Lightly sauté for 5 to 8 minutes. Add lemon juice, pepper to taste and sprinkle with parsley. Serve over cooked rice. Serves 4. Submitted by: Belle |
