CHICKEN ALA KING 
1 c. mushrooms, sliced
1/2 c. chopped red pepper
4 tbsp. butter
8 tsp. flour
1/2 tsp. salt
2 c. light cream or milk
2 beaten egg yolks
3 c. cubed, cooked chicken
2 tbsp. sliced pimento
2 tbsp. dry sherry
3 tsp. lemon juice
1/2 tsp. paprika
6 puffed pastry shells or 3 c. cooked rice

In saucepan cook mushrooms and pepper in hot butter until just tender. Stir in flour and salt. Add cream or milk all at once. Cook and stir until thickened and bubbly. Gradually stir 1/2 cup of hot mixture into egg yolk; return all of the mixture to the saucepan. Cook and stir over medium heat just until mixture returns to boiling. Add chicken, pimento, sherry, lemon juice, and paprika; cook and stir until heated through. Serve over puff pastry shells. Serves 6.
