PUMPKIN COOKIES 
1/2 c. butter
1 c. brown sugar
1 c. dates or raisins
1 c. nuts
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1 c. pumpkin
1 egg or substitute equivalent

Mix together and drop by spoonfuls onto cookie sheet. Bake at 350 degrees until brown, about 10 minutes.

FROSTING:

3 tbsp. butter
2 c. powdered sugar
2 tbsp. evaporated milk
1 tsp. vanilla

Melt butter and combine with other ingredients. Frost cookies. (Add orange food coloring as desired.)
