CHINESE PEPPER STEAK 
2 lbs. sirloin, 1 inch thick cut into 1/4 x 2 1/2 strips or diagonal cross grain
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ginger
1/4 cup soy sauce
1/4 tsp. sugar
2 large bell pepper, cut in strips
1-2 Tbsps. cornstarch
Chicken broth
Water chestnuts, optional
Snow peas, optional

Sear meat over high heat in oil. Add seasonings and stir 1 minute. Remove beef with slotted spoon. Add peppers and onions in oil. Stir fry no more than 2 minutes. Mix soy sauce, cornstarch and small amount of broth. Add all ingredients. Add more broth until desired consistency. For a different turn add water chestnuts and snow peas.
