EGGPLANT BALLS 
2 med. eggplants
1 onion, minced
1/2 c. green bell pepper
1 (8 oz.) pkg. herb stuffing
1/2 c. Parmesan cheese
1/2 tsp. garlic
1/2 tsp. monosodium glutamate
1/2 tsp. Accent
4 eggs, beaten
1/2 tsp. Tabasco
3/4 c. butter

Peel and dice and cook eggplant in salt water; melt butter, saute onion and pepper. Add stuffing mix, cheese, garlic, MSG;, and eggplant. Combine all and chill. Roll in balls, bake 20 to 35 minutes in 325 degree oven.
