SMITH RIVER ROTINI 
1/2 lb. rainbow Rotini, cooked
1/4 c. black olives, sliced
6 oz. marinated artichoke hearts, quartered
Can green beans
4 oz. pepperoni sliced and quartered
1 white onion, diced
1 green pepper, diced
1 red pepper, diced

Mix all ingredients. Pour Smith River dressing over and toss. Marinate 8 hours before serving.

SMITH RIVER ROTINI DRESSING:

3/4 c. olive oil
1/4 tsp. garlic salt
1/4 tsp. pepper
2 tbsp. Parmesan cheese
1/2 tsp. sugar
2 tbsp. country dijon mustard
1/3 c. red wine vinegar

Combine all ingredients and shake well.:

Grandma really liked this salad when she came to Livingston to visit.
