HAWAIIAN PORK | |
1 1/2 lbs. pork tenderloin, 1" cubes 1 tbsp. shortening 1/3 c. water 1/2 c. brown sugar 3 tbsp. cornstarch 1/3 c. vinegar 1 (1 lb.) can pineapple chunks (reserve 1/2 c. liquid) 1/4 c. soy sauce 1 tsp. salt 1 green pepper, 1/2" squares 1 green onion, sliced thin 1 (8 oz.) can water chestnuts, sliced 2 tomatoes, cut in sixths Brown pork; add water. Cover; simmer 40 minutes. Drain fat. Combine sugar and cornstarch. Add vinegar, pineapple liquid, soy sauce and salt. Add to meat. Cook until thickened, 5 minutes. Add pepper, onion, pineapple, chestnuts, and tomatoes. Cook 3 minutes. (Do not over cook.) Serve over rice. |
