HONEY ROASTED ALMONDS 
2 c. whole almonds, skins on
1/4 c. sugar
1/2 tsp. salt
2 tbsp. honey
2 tbsp. water
2 tsp. almond or vegetable oil

Spread the almonds in a single layer in a shallow ungreased baking pan and place in a cold oven. Bake at 350 degrees, stirring occasionally, until the internal color of nuts is tan (12 to 15 minutes). Remove from oven and set aside.

Thoroughly mix the sugar and salt. Stir together the honey, water and oil in a medium size pan and bring to a boil over medium heat. Stir in the roasted almonds and continue to cook and stir until all the liquid has been absorbed by the nuts (about 5 minutes). Immediately transfer to a medium bowl and sprinkle sugar mixture over all and toss. Spread on wax paper and cool.

Try a half teaspoon of cayanne pepper in the liquid mixture if you want to jazz them up. Still tastes sweet but give them a little kick.

I adapted this for rave - no oil - vegan diet., using 1/2 molasses & 1/2 maple syrup instead of honey. I just omitted mitted the oil. I tossed with mix of raw sugar and sea salt. Came out great!!!

So simple. I made this for my parents for Christmas also for our holiday parties from Thanksgiving on.These are a big hit. With leftovers I chopped up and put in our salad and atop yogurt YUM-O!!
They are versatile and you can add different seasonings in with the sugar to meet you party needs also add a bit of chili powder in the wet mix make a big taste.

Definitely add 1 tsp. cinnamon to the sugar and salt mixture. At 7,600 ft. (foothills west of Denver) it takes at least 10 minutes to absorb all the liquid. Whole Foods sells unsalted roasted almonds in the bulk department -- easier!
