GOLDEN CUCUMBER RELISH 
This recipe was from a very dear neighbor who got me started making my own relish many years ago. I have never used store bought relish since... many compliments and have just as many asking what my secret was, I always share...

6 lb. ripe yellow or green cucumbers
6 large onions
3 peppers each of green, red, yellow and orange if you can find them
1/4 cup salt

The Mix:

2 cups white sugar
2 cups brown sugar
2 cups good cider vinegar
1 tsp. each of turmeric, celery seed, mustard seed

Find a very large Non Reactive Bowl.

Pare the cucumbers, disregard seeds and pulp. Cut into small diced pieces cut peppers and onions into same sized diced pieces. Cover with 1/4 cup of salt.

Prepare the Mix in a large stock pot. "I use a very large Stainless Steel heavy bottom stock pot." Add the vegetables to the mix, cook slow until the onions are transparent, not mushy... approximately 20 minutes.

Have your jars cleaned hot and ready for sealing. Prepare your lids and have your rings ready.

Once your relish is ready, place in hot jars and seal at once. Make sure you wipe the tops of your jars and leave one inch from the top.
