“SAMMY'S #1 SALMON PATTIES” IS IN:

SAMMY'S #1 SALMON PATTIES 
1 (14 3/4 oz.) can salmon
1/2 med. onion, chopped
2 eggs
1 tsp. ground pepper
1 tsp. fresh lemon juice
1 whole pkg. saltine crackers, crushed

Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.

Form into patties 3/4 to 1-inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.

In large frying pan heat 1/2-inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold.

Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for!

This is now my go to recipe for Salmon Patties. I grew up making them with flour or cornmeal, but the crackers are a great choice. I make them just as the recipe says. I use my Ninja to make the cracker crumbs. Love this! Thanks from one Sam to another!

I make my salmon patties almost like yours. I never used lemon juice before. I'm going to try it that way. I bet they taste even better. they say lemon juice brings out the flavor more in foods. I'm glad I came acrossed your recipe. Thank you.

My mother always made these for the family, made them exactly like these, so good however I substitute "Multi-Grain Club Crackers," I always prefer them when recipes call for saltines. My favorite two sides are cream style corn plus cold applesauce. These patties are delicious cold, directly out of the fridge as a snack, all by themselves! Incredible flavor when flavors mingle overnight! Don't forget to try them alone, you'll agree.

True, lots of people eat the bones and they blend right in and you won't even notice them. It's just me, but I like to remove them.

I love this recipe. I always follow the recipe the first time I make it. Then you can adjust it. I like a little pinch of dill. I've made them a lot of ways. Mashed potatoes, cornmeal, flour, but the Crackers are the best. Lemon just goes with fish. Salmon cakes are my comfort food, with Mac and cheese and baked beans. It was the go to meal for my mother. When I have a bad day, its still what comforts me. I changed up the sauce some, I like sour cream, chopped up cucumbers (well drained), and a little dill and lemon juice. Give it a try.

Just for laughs, the next time you have a pile of left over french fries at your favorite burger place, bring them home and use them instead of the crackers...a whole new taste and you avoid wasting food as well.

Just knead them into chunks with your hands and then follow this recipe substituting the amount of fries for the amount of crackers. Works with many types of left over potato as well.

Perfect as is. Saltine crackers really make a difference in a lot of recipes. Even my husband will eat these, and he hates fish. Sometimes I also add some celery, green pepper and green onion, cutting back on the regular onion a bit. Careful or they'll fall apart with too much extra filling, though. Might try the jalapenos sometime for zip. Love these with some ketchup and mustard. He likes them with tarter or mayo. Goes good with mac 'n cheese and broccoli as sides!
