My Mom's way salmon patties: 1 can pink salmon, drained & save broth; 8 or 10 saltine crackers, crunched; 1 egg, beaten; 1 tablespoon dried minced onions; 1/2 teaspoon Lawry's Seasoned Salt;1/4 teaspoon black pepper; 1 teaspoon lemon juice. Mix egg with onions, lemon juice and seasonings. Add drained salmon and about half the cracker crumbs, mix well. If too dry to form into patties, add some of the broth. Form into 4 or 5 patties. Cover the patties with remaining cracker crumbs and fry in skillet to which you've heated 3 Tablespoons cooking oil. Brown on each side. Serve with tartar sauce. I also have a delicious homemade recipe for that, too.) I hope you like this Iowa recipe. :)
