MEAT LOAF ITALIANO 
1 egg, beaten
1/2 c. cracker crumbs
1/2 c. minced onion
2 (8 oz.) cans Italian tomato sauce
1/2 tsp. oregano
3 c. shredded Mozzarella cheese
1 clove garlic, minced
1 tsp. salt
1/8 tsp. pepper
1 1/2 lbs. lean ground beef
1/2 tsp. basil

Preheat oven to 350 degrees. Combine egg, cracker crumbs, onion, 1/3 cup of tomato sauce, 1 cup cheese, oregano, basil, garlic, salt, and pepper in large bowl. Mix well. Add meat. Mix thoroughly with hands. Shape into flat rectangle, about 10 x 12 inches on wax paper. Sprinkle with remaining cheese. Roll up like jelly roll and press ends together to seal. Place on rack in shallow baking dish. Bake 1 hour; drain fat. Pour on remaining tomato sauce. Bake 15 minutes. Let stand 10 to 15 minutes before slicing.
