GAZPACHO 
4 lg., very ripe tomatoes, peeled and diced
1 lg. cucumber, peeled and diced
1 med. onion, finely chopped
1 green pepper, finely chopped
1 c. tomato juice
1 tbsp. wine vinegar
3 tbsp. olive oil
1 sm. clove garlic, minced
Salt, pepper (or salt free parsley patch all purpose)
Dash hot pepper sauce

Combine tomatoes, cucumber, onion, green pepper, tomato juice, vinegar, oil and garlic. Season to taste. Mix well and chill.
