4 cans hominy
1/2 lb. sharp cheddar cheese, grated

Make medium white sauce, adding half of the cheese. Stir until melted.

1 med. onion, chopped
1 jalapeno pepper

Chop fine and stir into white sauce. Drain hominy and pour into greased casserole. Pour sauce over and stir well. Place remainder of grated cheese on top. Cook 2 hours in 300 degree oven.
