BAKES MEXICAN HOMINY 
2 cans hominy, drained
1 can cream of chicken soup
1 onion
1 stick butter
Jalapeno pepper (1 or 2, to your taste)
1 c. grated cheese
Salt and pepper to taste

Cook onion in butter. Add to hominy and cream of chicken soup. Add peppers and 3/4 cheese. Mix thoroughly. Top with remaining cheese and bake 30 minutes at 350 degrees.
