GRITS CROQUETTES 
2 c. cooked hominy grits
2 c. ground cooked chicken or flaked fish
2 tbsp. chopped onion
1 tsp. salt
1 tsp. Worcestershire sauce
1/2 c. bread crumbs or cracker crumbs
1 egg, beaten
Dash of pepper

Chill then shape into 12 croquettes. Roll in additional crumbs; dip in egg and roll again. Pan fry until golden brown.
