SCOTTISH SKILLET POTATOES 
2 tbsp. bacon fat, butter, or butter
6 med. potatoes, slice thin (about 4 c.)
2 med. onions, sliced
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. parsley
3/4 c. water

Heat fat in 10 inch skillet until hot. Layer half each of the potatoes and onions in skillet. Sprinkle with half of each salt, pepper, and parsley. Repeat. Add water. Cover and simmer over low heat until potatoes are tender and liquid is absorbed, about 30 minutes (add water, if needed).
