CAULIFLOWER & RICE CASSEROLE 
1 1/2 c. grated cheese
1 1/2 c. Minute Rice (cooked as directed)
1/2 c. celery
1 c. chopped onion
1 lg. chopped green pepper
1 lg. chopped tomato
1/4 c. chopped mushrooms
1 1/2 c. chopped cauliflower

Cool chopped vegetables except tomato in microwave for 15 minutes. Add cooked rice and vegetables together in casserole dish for microwave. Cook on high 4 minutes. Add tomato and grated cheese. Heat for 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
