CAULIFLOWER RICE CASSEROLE 
1 lb. ground beef
2-3 tbsp. butter
1 med. diced onion
1 head cauliflower
1 c. uncooked rice
1/2 pt. sour cream
Salt & pepper to taste

Saute beef and onion in butter. Salt and pepper lightly. Cook cauliflower in lightly salted water until tender, but not over cooked. Drain and break or mash into small pieces. Cook rice. Alternate layers of beef, rice, cauliflower in casserole dish. Top with sour cream. Bake at 350 degrees until heated through, about 15 to 20 minutes.
