BRAD'S VEGGIE CASSEROLES 
2 heads broccoli
1 head cauliflower
1 1/2 lbs. sharp cheddar cheese
1 1/2 lbs. Monterey Jack cheese
2 cans cream of mushroom soup
5 c. rice, cooked
Salt, pepper, garlic & 1 sm. onion

Steam veggies. Shred cheese. Mix veggies and cheese and soup and rice together in a large bowl. Add garlic and diced onion and salt and pepper to taste. Bake 1 hour at 350 degrees. Makes 2 large casseroles.
