HOT VEGGY CASSEROLE 
1 (20 oz.) frozen mixed veggies, slightly thawed
1 c. chopped celery
2 to 3 tbsp. minced onion
1 1/2 c. shredded cheddar cheese
1/2 c. light mayonnaise
1 c. coarsely ground saltines
1 stick butter, melted

Combine first 5 ingredients and turn into casserole. Cover with ground saltines and drizzle with butter. Bake, covered for 15 minutes at 350 degrees. Uncover and cook 30 minutes more.
