HOT TURKEY & CHEDDAR CASSEROLE 
butter
3 c. cubed cooked turkey
3/4 c. celery, chopped
1 can sliced water chestnuts
1/2 c. red & green bell peppers, chopped
1 1/2 c. mayonnaise
1 tbsp. grated onion
2 tbsp. lemon juice
2 c. shredded cheddar cheese, divided
1 c. shredded mozzarella cheese, divided
1 c. corn flake crumbs

Preheat oven to 350°F. Coat a 9 X 13 inch baking dish with butter. In a medium bowl, combine turkey, celery, water chestnuts, bell pepper, mayonnaise, onion, lemon juice, 1 cup cheddar cheese and 1/2 cup mozzarella cheese; mix well.

Place the mixture in the baking dish and bake for 25-30 minutes, or until heated through. In a medium bowl, combine the remaining 1 cup cheddar cheese, 1/2 cup mozzarella cheese and corn flakes. Sprinkle cheese mixture over baked turkey casserole and bake for 5-8 minutes longer, or until cheese melts.
