HAM 'N HASH BROWNS CASSEROLE 
1 c. creamed cottage cheese
1 (4 oz.) pkg. cream cheese, softened
2 tbsp. chopped green onions
1/2 tsp. basil
1/2 tsp. paprika
3 c. hash browns, thawed
2 1/2 c. cooked ham or turkey ham, cubed
1 c. grated Mozzarella cheese

Preheat oven to 400 degrees.

Combine first five ingredients in bowl until well blended. Place half of hash brown potatoes in an 8 inch square baking dish. Spread cream cheese mixture over. Sprinkle ham over cream cheese and potatoes. Sprinkle half of Mozzarella over ham. Top with remaining hash browns. Bake 35-40 minutes until heated through. Top with remaining cheese. Return to oven until cheese melts.

Great for a brunch!

I used parsley instead of basil and cheddar instead of mozzarella cheese. The dish needed some color to it, so I seasoned the hash browns with salt and pepper and sprinkled them with paprika. I sprayed the top with non-stick spray to help it brown (butter would have worked too). My husband topped his with hot sauce and pronounced it good.
