CHOCOLATE DROP COOKIES WITH
MOCHA FROSTING
 
1/2 c. shortening
1 c. brown sugar
1 egg
1 tsp. vanilla
2 sq. semi sweet chocolate, melted
1 2/3 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. milk
1/2 c. nuts

MOCHA CHOCOLATE FROSTING:

6 tbsp. cocoa
6 tbsp. hot coffee
6 tbsp. butter
1 tsp. vanilla
3 c. confectioners sugar

Cream shortening and sugar. Add egg, vanilla and melted chocolate. Add dry ingredients alternately with milk. Drop on greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes.

Combine ingredients for frosting, beating well. Frost cooled cookies.

Pretty awesome, I added some coffee grounds to the cookie base for a greater coffee-flavor. Though drop cookies are generally more liquidy, I still added some flour to these because mine were falling flat.
