EASY HAM AND CHEESE QUICHE 
9 inch deep dish pie crust, baked
1 c. diced, cooked ham
1 c. fresh mushrooms, sliced
1 1/2 c. Jack cheese, grated
1/3 c. diced onions (optional)
3 eggs, beaten
1/2 c. mayonnaise
1/2 c. milk
Salt and pepper for flavor

Saute onion and mushrooms in small amount oil just until onions are soft. In large mixing bowl beat together by hand, milk, mayonnaise, ham and seasonings. Add the cheese and onion-mushroom mixture and heated eggs and stir to blend. Pour into baked pie shell and bake 350 degrees for 45 to 50 minutes. Let stand for 10 minutes before serving.
