CASSEROLE HAM 'N CHEESE QUICHE 
1 1/2 c. cubed, cooked ham
6 oz. (1 1/2 c.) shredded cheddar or Swiss cheese
1/4 c. chopped onion
3 tbsp. chopped green pepper
1 c. Hungry Jack buttermilk, complete or extra light pancake mix
1/4 tsp. salt
1/8 tsp. pepper
2 c. milk
5 eggs

TOPPING:

1/2 c. crushed corn flakes cereal
1/4 c. butter, melted

Heat oven to 350 degrees. Grease 12 x 8 inch baking dish or shallow 2 quart casserole. Place ham, cheese, onion and green pepper in the bottom of prepared pan.

In a large bowl, combine pancake mix, salt, pepper, milk and eggs; beat for 3 minutes on medium speed. Pour over ham mixture. Sprinkle corn flakes over egg mixture. Drizzle butter over corn flakes. Bake at 350 degrees for 50 to 60 minutes or until golden brown and center is done. Serve immediately. 6 servings.

TIP: To substitute 9-inch quiche pan for 12 x 8 inch baking dish, reduce corn flakes to 1/4 cup; omit butter. Bake quiche at 325 degrees for 55 to 65 minutes or until golden brown.

This was delicious! Instead of ham I substituted a lb of hot pork sausage. I used a 9x13 and only baked for 40 minutes. Very nice breakfast casserole!
