ALABAMA HAM AND CHEESE QUICHE 
1 c. shredded Swiss (or Cheddar) cheese
1 c. chopped, cooked ham
1/2 c. chopped onion
1 (9 inch) deep dish pie shell
1 (13 oz.) evaporated milk
3 eggs, beaten
1 c. hot, cooked grits
1 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. pepper

Sprinkle cheese, ham, and onion over bottom of pie shell. Stir together remaining ingredients. Pour into pie shell. Bake in 375 degree oven for 45 minutes to 1 hour. (Test with knife in center as in any other custard.) Let stand 10 minutes before serving.

Turned out great! Needed to bake over 1.5 hrs though...
