LIME GELATIN SALAD 
Salad:

1 package lime gelatin (Jello)
1 cup crushed pineapple
1/4 cup chopped pecans
1 cup diced celery
1 cup cottage cheese

Prepare gelatin as you normally would, following package directions. When the gelatin has partially jelled, add the remaining ingredients and turn mixture into a mold or bowl. Refrigerate until set. When ready, unfold onto lettuce leaves and serve with dressing.

Dressing:

1 cup pineapple juice
1 egg, well beaten
1 tablespoon cornstarch
1 tablespoon sugar
1/4 cup cream, whipped
2 tablespoons lemon juice

Heat pineapple juice until boiling. Combine egg, cornstarch and sugar, mixing well.

Pour in hot pineapple juice. Simmer in a double boiler until the mixture has thickened.

Remove from heat and stir in the lemon juice. When cool, fold in whipped cream and serve over Lime Gelatin Salad.
