MEXICAN HOMINY 
8 slices bacon
2 (15 oz.) cans hominy
2 lg. tomatoes, chopped
1 c. shredded cheese
1 c. chopped onion
1 tbsp. flour
Salt & pepper
1 tsp. chili powder

Cook bacon until crisp, crumble. Add onion and hominy to 2 tablespoons drippings in skillet. Cook until onion tender. Combine bacon, flour and tomatoes in large bowl. Add hominy mix, 3/4 cup cheese and rest of ingredients. Spoon into greased 2 quart baking dish. Bake at 350 degrees for 25 minutes. Add rest of cheese and bake 5 minutes more.
