BROCCOLI AND CAULIFLOWER
CASSEROLE
 
1 (20 oz.) pkg. cauliflower
1 (20 oz.) pkg. broccoli
1 stick butter
1 lb. light Velveeta cheese
1 tube plus 1/3 pkg. Ritz crackers

Cook vegetables 10 minutes in boiling water. Drain. Melt cheese and butter. Mix vegetables and cheese mixture together. Crush crackers. Butter casserole dish. Place alternating layers of vegetables and cracker crumbs in casserole. Bake 20 minutes at 350 degrees.
