RECIPE COLLECTION
“LIGHTNING COOKIES” IS IN:

LIGHTNING COOKIES 
1 cup butter
1 cup sugar
4 eggs
1/2 tsp. vanilla (optional)
1 1/2 cups flour
1 tsp. baking soda
chopped nuts
cinnamon sugar

Combine ingredients except nuts and cinnamon sugar. Spread mixture in a well greased pan and sprinkle with chopped almonds and cinnamon sugar.

Bake for 20 minutes at 350-375°F. Cut into squares while still hot.

This is an old family recipe from the Reed family of Baton Rouge, Louisiana. The original recipe does not call for vanilla but you may add it if you like the flavor of vanilla.

Cinnamon sugar may be purchased premixed, or make your own by combining 3 tbsp. of white sugar with 1/4 tsp. cinnamon (or a pinch more, to your taste), which should be enough for this recipe.
