PINEAPPLE UPSIDE - DOWN CAKE 
1/4 c. butter, melted
Pineapple chunks
1/2 c. light brown sugar
Hot milk sponge cake batter

Melt butter in an 8 x 8 x 2 inch pan. Sprinkle with brown sugar. Arrange pineapple chunks over sugar and add batter. Bake at 350 degrees for 35 to 40 minutes. Cool 5 minutes in pan. Invert pan, let stand one minute before lifting off. Well - drained canned peaches may be substituted for the pineapple.
