KATHLEEN'S CARROT CAKE 
2 c. plain flour
4 eggs
2 c. sugar
2 tsp. cinnamon
3 c. grated carrots
1 1/2 c. Wesson oil
2 tsp. baking soda
1 tsp. salt

Mix oil and sugar and add eggs. Beat. Add dry ingredients that have been sifted. Fold in carrots. Bake at 350 degrees for 40 minutes.

ICING:

8 oz. pkg. cream cheese
1/2 stick butter
2 tsp. vanilla

Cream, then beat in box of confectioners sugar and 1 cup chopped nuts.
