GRANNY'S CARROT CAKE 
2 c. sugar
1 1/2 c. liquid shortening
4 eggs
2 c. plain flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. allspice
3 c. grated carrots
1/2 c. pecans

ICING:

1 box powdered sugar
8 oz. soft cream cheese
3/4 stick butter
1 tsp. vanilla

Mix sugar, shortening and eggs in bowl. Sift flour, soda, cinnamon, allspice. Add to sugar mixture. Gradually fold in carrots and nuts. Grease and flour 2 round cake pans. Bake at 325 degrees for 35 to 40 minutes. Cool and ice layers. Keep covered and refrigerate for moist cake.
