CARROT CAKE 
1 1/2 c. cooking oil
2 c. sugar
4 eggs, beaten
2 c. plain flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. baking powder
3 c. grated carrots
1 c. chopped pecans

Beat oil and sugar well. Add eggs; beat well. Sift flour, cinnamon, soda and baking powder; blend with egg mixture. Fold in carrots and nuts; place in loaf pan. Bake at 350 degrees for 1 hour. Bake for 30 minutes if in layer pans.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box confectioners sugar
2 tsp. vanilla flavoring

Blend frosting ingredients; spread on cooled cake.
