MANGROVE MAMA'S KEY LIME PIE 
1/2 stick butter
2 cups crushed graham crackers
1 tbsp. cinnamon
2 tbsp. sugar

FILLING:

8 large egg yolks (separated)
3 (10 oz.) cans sweetened condensed milk (not evaporated)
1 1/3 cups Key lime juice

Preheat oven to 375°F.

Melt butter then stir in cracker crumbs and add cinnamon and sugar. Press into pie pan then bake for 8 to 10 minutes. (If you can smell it, it's too far gone!). Let cool.

In a non-reactive mixing bowl, beat yolks for about 2 minutes. Blend milk into yolks and then add lime juice. Pour into crust and bake 10-15 minutes.

Cool and refrigerate at least 3-4 hours. Top with whipped cream if desired.
