GRANDMA'S CARROT CAKE 
1 c. Wesson oil
2 c. sugar
4 eggs
2 c. plain flour
2 tsp. baking soda
1 tsp. cinnamon
1 c. pecans

Mix eggs, oil, sugar; add flour, soda, cinnamon and nuts. Mix well. Divide into 3 parts. Cook until done. Cool and put icing between layers and on top. Bake 350 degrees until done.

ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
1 tsp. vanilla

Melt butter. Cut cream cheese into pieces. Mix and stir until melted. Remove from stove. Add powdered sugar and mix well. Add vanilla.
