“PEANUT BUTTER COOKIES” IS IN:

PEANUT BUTTER COOKIES 
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
large pinch of salt
1/2 cup butter
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg, beaten
1 tsp. vanilla

Whisk together flour, baking soda and salt.

Cream together butter and peanut butter until well blended and smooth, adding the sugar gradually to mixture. Beat until mixture is light and fluffy.

Add 1 egg, well beaten; stir in vanilla. When well mixed, add flour mixture, stirring until mixed. To avoid tough cookies, do not beat - stir only until mixed.

Drop by the teaspoonful onto a greased or parchment-lined baking sheet and press a criss-cross pattern onto the top using the tines of a fork that has been dipped into flour.

Bake in a preheated 350°F oven for 8 minutes. Do not overbake.

Makes about 3 dozen.

I love peanut butter cooked! However this recipe was only ok... There was not as much peanut butter as I had hoped for and it's a bit dry and crumbly and didn't make as much as said.. I even made them small.. But overall they were good and they were still eaten up!;)

Cookies turned out sooo good. I added a piece of dark raspberry chocolate in the center. Also I substituted 1/4 cup more peanut butter and only used 1/4 cup of butter. I don't do that much cooking but these were very easy and results were awesome.

I thought these were okay. I will note that I used 1 cup of white sugar instead of brown white. The peanut butter flavor was not as strong as I would have liked. Next time I might dip them in melted chocolate or drizzle the chocolate over.

I made this with Smuckers all natural creamy peanut butter. The batter was very dry and crumbly... but could be packed into a small cookie shape. They still cooked up very nice. 5 stars for flavor!!!
