SHE CRAB SOUP 
2 tbsp. butter
1 tbsp. flour
1 qt. milk
3 c. white crab meat with roe (chopped egg yolks will do)
1/4 pt. heavy cream, whipped
1/2 c. dry sherry
Salt
Pepper
Lemon juice

In top of double boiler melt butter and blend with flour until smooth. While stirring constantly, add the milk slowly. Add crab meat and roe plus all seasonings except the sherry. Cook over low heat until hot, add sherry and serve with a topping of whipped cream.
